  • cups avocado, chopped
  • 1 large heirloom tomato, very ripe
  • 1 red bell pepper, cored, seeded and chopped
  • 3 small Lebanese cucumbers or 3 cups regular small cucumbers
  • ½ lime, juiced
  • 2 teaspoons cumin seed
  • 1 teaspoon thyme leaves
  • teaspoons Himalayan or Celtic sea salt
  • 5 large basil leaves
  • 1 teaspoon black pepper, freshly ground
  • ½ cup water, if too thick (optional)


  1. Roughly chop all the ingredients.
  2. Blend everything except the basil thoroughly.
  3. Pulse in the basil.
  4. Garnish with pepper.


Cucumber Highlight

Cucumbers are technically a fruit. They are very common these days, found in just about all salads. It has a high water content so it is good for juicing with other less water-rich vegetables like kale and collards. I recommend leaving the skin on so you get the green chlorophyll. Also in the skin, the cucumber has plant sterols, a substance known for reducing cholesterol.
